Scrambled Eggs on Toast

Ingredients:

4 eggs

Coconut Milk

Salt to taste

Parsley

Instructions:

Beat eggs in a bowl. Stir in coconut milk, salt.

Heat a skillet over medium-low heat; pour in egg mixture. Cook and stir until fluffy and firm, 5 to 7 minutes.

Sprinkle with parsley

Serve with pumpkin and rice bread/avocado/roasted vegetables/mince rissoles/salad.
