    Potato and Leek Fritters

    1.2kg white skinned potatoes

    1 leek, washed

    2 eggs lightely beaten

    1 Tbsp of rice flour

    ground sea salt

    2 Tbsp of coconut oil

    Serves 4-6

    Peel and grate the potatoes. Pat the potato dry and put into a bowl. Finely chop the leek and add it to the bowl with the potato. Add the eggs, flour and salt. Mix until just combined.

    Heat the oil in a large frying pan. Drop tablespoons of the mixture into the pan.

    Fry on each side for a few minutes, or until golden brown. Serve hot with salad, roasted vegetables or sweet potato and butter bean mash.
